Adding a scoop of dairy to a traditional dish may just be the way to enhance the nutritional value of the diet of poor people. Arla Foods Ingredients recently explored this idea, namely how to improve the staple diet of low-income consumers in the Democratic Republic of the Congo (DRC) without raising the price of the food. The DRC is one of the poorest countries in the world.
According to the results of a field study the opportunity lies in fufu, a traditional cassava and maize flour dish that is widely consumed daily. Through the addition of 10% dairy ingredients, fufu could become a daily source of milk protein and minerals. To read more, click HERE.
